Oh, and if we can post recipes for anything we cook ourselves - then it might give us all some inspiration!

(AKA Fast Show)... This season I will be mostly wearing eating Fish Stew!

Flash & LyndyLou have had this... Josie and her fella will be trying soon... and tonight we have friends Paul & Fran over to try it. Paul is the talent behind www.360turismo.com and looks like Vin Diesel (or so I tell him whenever I've had a glass of Vino Collapso or three).

Here's the recipe!

Here's the recipe for a Hot Pepper Marmalade which goes really well with grilled or seared fresh tuna.  It's Flash's signature dish (well apart from fried eggs)

Ingredients

1 med red onion finely chopped
2 garlic cloves finely chopped
1 tsp ground coriander
2 tbsps olive oil
2 red peppers seeded and chopped into strips
1 inch piece of fresh ginger finely grated (optional - we don't have it because I hate ginger)
2 red chillies finely chopped
100ml red wine vinegar
40g soft light brown sugar

Sweat the onion garlic and coriander in the olove oil until soft and golden.  Add the chopped peppers ginger and chillies and cook over a low heat for 10 mins or so until soft.  Add the vinegar and sugar, bring up to a simmer and leave to cook gently for 20 mins or until the mixture is thick and jam like, stirring occasionally on the way.

The hot pepper marmalade is fantastic with Tuna or Salmon, use the darkest sugar you can get, and it takes more than the twenty minutes so give it plenty of time.
